I know with the scatter plot it's doable, I just don't want to change the structure of my viz to achieve this
This is not possible in a line chart, but one can use a scatterplot with line connectinos to acheive this. See: https://community.tibco.com/wiki/visualize-data-line-chart-where-line-color-varies-using-scatter-plot-line-connections
